Today I bring you a recipe for Carrot Cupcakes that I love! It's my favorite! On this occasion I made to celebrate the birthday of a friend, and they must be delicious, because not even one left over ;-) It can also be a good idea for Valentine's Day! And instead of decorating with color chips or nothing, we can put a virutitas of hearts or red!
24 Cupcakes Ingredients:
- 1 - 1 / 3 cups sugar (300g) 4 eggs
- 1 teaspoon cinnamon 1 teaspoon
- baking soda (baking powder)
- 1 cup chopped walnuts ( 100g)
- vegetable oil 1 cup (250ml)
- 2 cups flour (220g)
- salt 1 teaspoon vanilla extract
- 3 cups grated carrots (300g)
add in a large bowl sugar and oil, mixing well until Cream. Then they go throwing eggs one by one. Beat well and add the flour and all dry ingredients. Everything is mixed very well. Below is toss the carrots and walnuts, mix again until well blended. Molds are filled cupcakes at about 3 / 4 of its capacity. Finally we put in the oven at 190 ยบ for 20 minutes. I usually tend to go prodding with a stick and when retirement comes completely clean.
For Frosting:
- 1 tub of Philadelphia cheese medium
- 75gr of butter or margarine
- 2 cups powdered sugar (260gr) Vanilla extract
Philadelphia cheese is added to the butter or margarine. Then you add the icing sugar little by little and mix well until smooth.
TIPS: Sometimes they throw the vanilla frosting that is already made from the American store. It's great!
